The 68-year-old Austrian pensioner died of "painful shock", most likely a heart attack, after the attack on Sahl Hasheesh Bay in the Red Sea on Friday.
Footage of her shows her screaming for safety using a flipper as the water around her turns scarlet.
Terrified onlookers tried to distract the animal, but no one jumped to help.
The Austrian tourist, who is married to an Egyptian, tried to scream towards the shore with a fin. But she died of "painful shock" after apparently losing an arm and a leg.
After she miraculously returned to her home, doctors gave her CPR on the spot.
But she died minutes later in an ambulance.
Authorities closed the surrounding beaches for three days.
The woman was reportedly married to an Egyptian and lived in the countryside.
The video shows witnesses at a nearby pier recording the woman's attempt to survive and commenting on her plight.

A local report cited by the Russian news agency RIA Novosti said the shark bit the woman's arm and leg.
She was taken to the hospital, but she died on the way after her heart stopped and she couldn't restart.

The most common are the six-foot gray reef sharks, which have 13 or 14 sharp teeth.
